Grappa di Vin Santo Riserva 1992 - Avignonesi
Grappa is derived from the marc, the solid part of the bunch separated from the must, pressed and kept inside silos in closed environments and allowed to ferment. When the fermentation is complete, distillation starts. This is a delicate process, done through alembics, where vapour passes through a part of the marc, to extract its less volatile part and transmit special aromas to its vapours. Once the mixture is obtained, it is placed to age in precious wooden barrels and then bottled.
Avignonesi’s "Grappa di Vin Santo" is a high quality product, and this is due to the selected composition of the marc as well as distillation refinement: there are no words to describe it, you just have to try it.
