A reinvigorating drink which brings you at peace with the world, this is the «ponce livornese» prepared with coffee, rum and other ingredients which have never been revealed.
The recipe buries its roots in the past century when signor Rodano Civili, the owner of the Bar Civili in Livorno, a historic bar near the train station, invented the strange mixture, and since then the «ponce» has become a «cult» to enjoy after lunch or dinner.
Bar Civili is in via del Vignas, near the station. Inside the walls are covered with sober elegance with works by livornese artists: Natali, Domenici, Filippelli, other.
The tasty mixture of coffee and rum is prepared especially by Vittori - called the “ponce der vittori” -, a company that was recently taken up by Arcaffè, and which continues to produce the necessary ponce to make the true “ponce alla livornese”.
