The ‘cialda’ is a wafer-type of biscuit, but it is baked differently and is devoid of fats.
Montecatini cialde are born in 1920 in a patisserie lab that belonged to a Jewish family of Czechoslovakian origin, which was forced to leave the thermal city with the advent of the “winds of war” and the persecution of the Jews.
Before leaving the family succeeded in selling the successful activity to Orlando Bargilli who understood the potential op that strange rounded biscuit.
Since then these wafers have become a prized «sweetness» known throughout the world.
They are handmade by the Bargilli family since 1936 and they can be bought in the shop in Montecatini Terme.
